Fiber has long been described as good for digestion, but new research suggests its role runs far deeper than most people realise. When the gut runs short of fiber, the tiny microbes living inside it may begin to turn against the body itself.
The findings come from studies carried out at the Ludwig Institute for Cancer Research, with results published in the Proceedings of the National Academy of Sciences and in the journal Nature Metabolism during 2026, drawing fresh attention to how diet shapes the gut.
What happens when fiber runs low
The central discovery is a striking one. When dietary fiber is limited, gut microbes begin consuming proteins from the mucus lining that normally protects the gut wall, and in doing so they produce a range of harmful compounds inside the body.
That mucus layer is not a minor detail at all. It acts as a protective barrier between the contents of the gut and the delicate tissue underneath, so anything that wears it down can have consequences that reach well beyond digestion alone.
The harmful compounds involved
The research identified specific substances produced during this process, known as phenol metabolites, including p-cresol sulfate and phenol sulfate. These compounds are not harmless byproducts, but molecules that can have real effects on the body.
According to the findings, these phenols have been linked to worse outcomes in cancer and to systemic toxicity in patients with kidney disease. That connection is what gives the discovery its weight, tying a simple dietary habit to serious health concerns.
How fiber protects the gut

The encouraging side of the research is what fiber appears to do. The studies found that fiber reduced the bacterial breakdown of the gut's mucus lining, which in turn lowered the production of those same harmful phenols inside the gut.
In other words, keeping the microbes well fed with fiber helps steer them away from the gut wall. When they have plenty to digest from the diet, they are far less likely to start breaking down the body's own protective layer for food.
A surprising second ingredient
The research also produced an unexpected finding. Alongside fiber, the scientists pointed to indigestible plant proteins, referred to as Prif, as nearly as important for supporting the production of beneficial compounds within the gut environment.
This suggests that the picture is more complex than fiber alone. The team indicated that these plant proteins may eventually appear on food packaging labels, giving shoppers another useful factor to weigh when choosing what to put on their plates.
The people behind the work
The studies drew on a mix of models, including mouse, rat and human cell systems, as well as human samples, allowing the researchers to trace the process from the microbes all the way to potential effects in people.
The work was led by researchers including Jenna AbuSalim and Joshua Rabinowitz, who directs the laboratory. Their combined findings build a detailed case for why the fiber in a daily diet may matter far more than had previously been assumed.
A growing appetite for fiber
The research lands at a time of rising public interest in fiber. Surveys suggest that nearly 70 percent of consumers around the world now list fiber among the nutrients they most want to increase, part of a trend some have nicknamed fibermaxxing.
For most people, the practical message is straightforward. A diet rich in fiber from plants does more than ease digestion, since it may also help protect the gut lining itself, keeping the vast community of microbes inside working with the body rather than against it.
